Winter warmer: our vegetarian Christmas Recipe

This recipe comes straight from the Turl Street Kitchen cookbook - a classic veggie winter warmer with a festive spiced twist.  We are known here at the TSK for our commitment to fresh local produce so make sure those vegetables are as fresh as can be for the best flavour and impact!

So, without further ado we present the Turl Street Kitchen Squash, Spinach and Celery bake.

Ingredients

1 pint double cream
1 pint creme fraiche
200g grated Westcombe chedder
Nutmeg
Fresh thyme
Salt and pepper
1 squash
500g spinach
500g celery

Preparing

  • Peel, dice and roast the squash for 15mins
  • Sautee the fresh spinach with olive oil and grated garlic
  • Cut the celery into 1 inch batons which are then blanched in water until tender

Cooking

  • Arrange the vegetables in a deep baking dish while still warm
  • Whisk the creme fraiche, cream, salt and pepper together then pour the mixture over the vegetables
  • Top with chedder and a sprinkling of festive nutmeg
  • Bake in a hot oven (around 200c) until golden and bubbley

Eating

  • Serve with friends, fire-light and a generous glass of white
